Caffeine-free Butterfly Pea Flower Tea

From electric blue while in the pot to deep violet while in the cup, this herbal butterfly pea flower tea recipe has thrived in Southeast Asia for centuries. This quick-to-make beverage is made from fresh or dried Clitoria ternatea/butterfly pea/Aparajitha flowers. The blue colour turns purple as soon as lemon is added, which makes it look magical.

Ingredients

Water - one cupFresh/dried butterfly pea flowers - 5-6Honey - to tasteLemon - half a slice

Preparation

Boil the water in a pot and pour the hot water over the flowers in a cup. Keep it aside for 2-3 minutes and then strain off the flowers.

Now take a serving glass and pour the lime juice and honey to taste. (If you wish to retain the blue colour, skip adding lemon juice.) Ice cubes can be added at this stage to turn it into a cold drink. Now pour in the extracted tea, mix everything well, and enjoy.
